Top recipes for an awesome veggie Christmas

Christmas can be a tricky time for vegetarians with turkey, ham and goose dominating menus and recipes everywhere, so we’ve collected a few of our favourite meat-free recipes to give you a few ideas for the ultimate veggie Christmas feast.
Starters
Nothing says decadence like a three-course meal, and there are far more exciting things for you to enjoy than the old stand-by salads.

Easy, relatively quick to make and absolutely delicious, this wintry little favourite will make a great Christmas starter or a festive lunch.

Roast Stuffed Pumpkin with Gingery Tomato Sauce
Roasted pumpkins make a great alternative to the traditional roast turkey, and with the wide variety of stuffing ideas out there you’d be hard pressed to find one that doesn’t appeal. We’re particularly fond of this recipe from cookery queen Nigella Lawson, featuring a basmati rice stuffing and a wonderfully Christmassy sauce.

Nut Roast with Salsa Rossa Picante
If squashes aren’t your thing, then nuts can make an excellent (and tasty) alternative. Nut roasts come in many different shapes and forms but this one from healthy food champion Jamie Oliver has a spicy twist to keep things interesting.

Christmas Veggie Wellington
For those who aren’t fans of the roast as a Christmas centrepiece there’s always this alternative of a British winter classic that would make a great main event for any festive meal. With a rice and mushroom filling and crisp puff pastry on the outside, there’s everything to love about this unconventional Wellington.

Desserts
Most desserts are vegetarian (we hope, anyway), but if you’re looking for inspiration this season here’s one of our favourite recipes anyway:
A little fiddly to make (and eat, probably,) but definitely one for showing off at your Christmas party, these festive little treats are easier to put together than they look. All you really need is a good biscuit recipe and some star-shaped cookie cutters!
