Lavo, an Italian restaurant located within The BoTree hotel in Marylebone, has recently introduced a negroni trolley experience to its dining service. This new feature enables visitors to customise their negronis with the assistance of a mixology expert, dubbed the Negroni Master. The trolley offers a variety of spirits and essences, allowing for a personalised drink tailored to individual tastes.

The concept of a mobile cocktail trolley is part of a growing trend in the hospitality industry, aimed at enhancing the dining experience through a fun and interactive element. At Lavo, guests can prepare their custom negroni with a base of Campari, and then choose from premium spirits such as Tanqueray Ten gin, Ketel One vodka, Casamigos tequila or mezcal, Buffalo Trace bourbon, Appleton Estate 12yo rum or Johnnie Walker Black Label whisky. Following the selection of the spirit, visitors can further personalise their cocktail by picking a vermouth from the likes of Antica Formula, Vermouth Del Professore Rosso or 1757 Vermouth di Torino Rosso. As a finishing touch, guests are invited to add their favourite flavour notes such as grapefruit, coffee, chocolate or rhubarb. Diners who order a negroni will also receive a cool little pin as a memento of the experience.

The restaurant has a Mediterranean-inspired decor with an impressive feature wall framing the open kitchen. Warm lighting and lush greenery help create a welcoming atmosphere. 

The introduction of the negroni trolley is part of the restaurant’s ongoing efforts to innovate and provide memorable dining experiences to its patrons. This bespoke service not only caters to individual preferences, but it also adds a theatrical element to the meal that will likely delight Lavo’s regular and new clients alike.
