Two Michelin-starred restaurant Trivet, located in the heart of Bermondsey, has introduced Labombe Wine Bar, a new concept aiming to transform the venue’s dedicated bar area into a wine lover’s retreat every Monday evening. The brainchild of former The Fat Duck Head Chef Jonny Lake and Master Sommelier Isa Bal, Labombe offers an exclusive by-the-glass wine selection alongside a menu of sophisticated bar bites.

Drawing inspiration from a fictional bistro Lake conceived for a school project, Labombe aims to marry the art of food and wine in a relaxed yet refined setting. The bar responds to Lake’s youthful vision with an array of drinks meticulously curated by Isa Bal, a Michelin Award-winning Master Sommelier. Bal delves into his celebrated 450-strong wine list to select unique, rare bottles for pouring by the glass, allowing guests a singular opportunity to sample exquisite wines without committing to a full bottle. The selection spans from traditional wine-producing regions like Italy, France, and the US to the historic vineyards of Georgia, Armenia, and Turkey.

Complementing the wine is a menu crafted by Lake, featuring a mix of small and large plates. Highlights include Focaccia with Salume Rosa, Farinata with Onion and Rosemary, and Homemade French Fries with Onion Ketchup. For those seeking more substantial fare, the menu offers dishes like Costoletta alla Milanese and a selection of seasonal small plates such as Green Asparagus, Anchovy Cream and Scallop Roe. Dessert options include as Tiramisu and Butter Tarts, Jonny’s Canadian childhood favourite.

Trivet, which opened its doors in November 2019, has quickly ascended to culinary acclaim, securing its first Michelin star in 2022 and a second in 2024. The restaurant’s name, a nod to the iron tripod essential in global cooking traditions, symbolises the harmonious relationship between kitchen, cellar, and bar, embodying the founders’ shared ethos of balance and warmth.

While the main restaurant remains closed on Mondays, Labombe Wine Bar is open in the evenings from 5 pm to 11 pm, with food service available until 9.30 pm. The new venture proves once again the enriching creative synergy between Jonny Lake and Isa Bal.
