Eleven Madison Park’s chef-restaurateur duo Daniel Humm and Will Guidara will open their first London restaurant this summer at Claridge’s. Davies and Brook – named after the two streets where the iconic hotel is located – will replace Fera, and EMP’s former chef the cuisine Dmitri Magi will be in charge of the kitchen.

The duo said: “Having the opportunity to bring our cuisine and hospitality to the most storied hotel in the world is really a remarkable feeling and a dream come true.”

In an interview with Bloomberg, Daniel Humm praised the quality of game in the UK, “which isn’t really celebrated in America the way it is in Europe”, as well as fish and dairy products.

“But on a more personal level, this is my first time opening a restaurant in Europe, a place I left so many years ago to forge a career in America. Most people don’t know this, but I even worked at Claridge’s when I was 15 years old and it left an indelible mark on me. Claridge’s has always been a place I’ve felt connected to, so being able to come full circle is really emotional and exciting – it feels like coming home.”

The duo aim at creating “a restaurant that, while we are part of the hotel, is also an amenity to the city”. Considering the success and acclaim of all the ventures – NoMad NYC, Los Angeles and Las Vegas – run by Guidara and Humm’s company Make It Nice, Davies and Brook is set to be the latest jewels in London’s culinary crown.
