Chef Nieves Barragán Mohacho to open Legado in Shoreditch celebrating regional Spanish cuisine

This August, Spanish chef Nieves Barragán Mohacho will open her second London restaurant, Legado, in Shoreditch. The new venue is a collaboration with JKS Restaurants and will offer a menu inspired by Spain’s regional culinary traditions, aiming to showcase lesser-known dishes, ingredients and producers from across the country.
Barragán Mohacho, originally from Bilbao in Spain’s Basque region, has been a prominent figure in London’s Spanish dining scene for over two decades. Her new venue, Legado, meaning “legacy” in Spanish, follows her debut solo venture, Sabor, which opened in Mayfair in 2018 and holds one Michelin star. The chef says: “Spain’s food heritage is incredible and has rightly deserved recognition in London and globally. Its colours, tastes and smells are rooted deeply within me. However, many dishes I love, I have never seen outside the country and want to bring them and even more to London.”
The restaurant will feature a 64-seat dining room and a 16-seat counter surrounding an open kitchen. In addition, a separate bar area named Taberna will serve tapas and pintxos throughout the day, with indoor and terrace seating.
A central element of Legado’s concept is the focus on regional ingredients and culinary traditions. Meat will be sourced from specific Spanish regions, including Lechazo de Castilla y León lamb and suckling pig from Segovia’s Tabladillo el Cochinillo farm. Iberian ham will be provided by Señorío de Montanera, a producer from Extremadura with personal ties to the chef’s family. Seafood will also feature prominently, with dishes available such as Crystal Mediterranean Prawns with Smoked Paprika and Moscatel Vinegar and Confit Lobster served with rose potatoes and a fried egg. Fish of the day will be offered with ajada sauce, a Galician preparation, with diners able to choose between the head or tail portion. Vegetarian options include a Legado Sandwich, inspired by a dish from Barragán Mohacho’s grandmother, made with Swiss chard, cecina and smoked cheese. Seasonal dishes such as Fideuà from Valencia and desserts like Apricot Sorbet with Almond Milk and Rosemary Oil will also be available.
The drinks menu showcases a 150-bin wine list focusing on Spanish wines, including traditional and emerging producers. An extensive sherry selection and a range of sparkling wines, from cava and corpinnat to txakoli, will also be offered. Guests will be welcomed with a 3-Sip Serve – a trio of small, chilled seasonal cocktails served in regionally inspired ceramic vessels.
Legado will be open Tuesday to Saturday, with lunch served from 12 till to 2.30pm and dinner from 5.30 to 10.30pm, meanwhile Taberna will operate throughout.
