Road to the World’s 50 Best Restaurants 2017: Davide Scabin of Combal.Zero

Known for his passion for experimentation and challenges, Davide Scabin is one of the most internationally acclaimed Italian chefs. In Italy they say genio e sregolatezza, literally “genius and unruliness”. He defines himself as a “food pusher”. His restaurant, Combal.Zero, in Turin, is considered one of the temples of modern fine dining.

We sat with Scabin for a 360-degree chat about his career starting from the development of the iconic Cyber Egg dish 20 years ago, to his future plans for the restaurant and the importance of the World’s 50 Best Restaurants list for the global food scene. Expect the unexpected.
