Osteria Francescana is a major presence in the World’s 50 Best list since 2009, holding a spot in the top ten for five years in a row. The Italian restaurant, led by chef Massimo Bottura, revisits traditional dishes from Emilia-Romagna as well as national classics from an avant-garde, conceptual standpoint. Set in the northern town of Modena, Francescana is the ultimate embodiment of contemporary fine dining.

A few days ahead of the ceremony, we caught up with the three-Michelin-starred chef at his restaurant to discuss the inspiration behind his dishes, the Food for Soul project he started with his wife Lara Gilmore last year at the Expo in Milan, the rumours about the opening of a new place in London and the tips he’d give to his younger self had he the chance to meet him.
