Two-Michelin-star chef Nacho Manzano celebrates Ibérica’s 10th anniversary and new spring menu with a one-off dinner

Last night, Nacho Manzano of two-Michelin-starred Casa Marcial and Ibérica restaurants group celebrated the 10th anniversary of the latter, preparING a 12-course tasting menu at the flagship Victoria branch.

The Asturian chef’s Dishes included the wonderful Sautéed Enoki Mushrooms, Cuttlefish and Squid Ink Sauce – from Casa Marcial’s menu –  and Oyster with Sherry and Borrage.

Tomato, Caperberries, Seaweed and Basil Oil Emulsion and Roasted Leek with Horseradish and Almond Emulsion.

Griddled Aubergine Steak Glazed with an 8-hour Reduced 11-Vegetable Glaze and Pitu Chicken from Asturias.

Salt-baked Seabass – also from Casa Marcial’s menu – and for dessert Leche y Pastos as well as Mango, Orange and Ginger Ice Cream.

This one-off dinner showcased the chef’s talent for haute-cuisine as well as the more approachable dishes that will be on Ibérica’s spring menu. It was a truly authentic night of Spanish cuisine.
