Tigre Tacos, the food truck pop-up at Nine Lives Alley in London Bridge, has taken on its first bricks-and-mortar space at The Gunmakers. Chef Ramon “El Tigre” Ramos serves his Mexi-Cali cuisine inspired by the street-food taquerias and trucks, with flavours of 70s Southern California and an exclusively seafood and vegetarian menu – all set within the 19th century public house and garden.

Chef Ramon Ramos, whose family restaurant is a taco institution in the city of Guadalajara, Mexico, first served Tigre Tacos on the cobbled streets of Nine Lives Alley in 2020. Favourites such as Baja Fish and Camarones Tacos are served here, made with grilled king prawns, habanero and roasted pineapple salsa, alongside a selection of ceviches, tostadas, charcoal-grilled whole fish and whole octopus sharers. And, of course, desserts. Each dish is made using fresh, seasonal ingredients and vibrant, sun-kissed flavours.

The cocktail menu is as much of a focus as the food, and is designed by Victor Barascu, the head bartender of Nine Lives cocktail bar. The list foregrounds agave classics and uses seasonal ingredients, serving playful twists on favourites such as Tequila and Tonic, Mezcalita, Paloma and Michelada. The beers are craft and the wines and natural as one would imagine.

The team at The Gunmakers have spent the past year restoring the townhouse to its original glory with mid-century accents and modern art adorning the walls. The three-storey space consists of a ground floor saloon bar, dining room, secret garden and the first-floor lounge.

Tigre Tacos at Gunmakers will be the second operation from the team, as the food truck stays parked up at Nine Lives Alley.
