Fine-dining lovers in Dubai can look forward to a unique gastronomic experience as Ossiano partners with Jordnær for a two-night culinary spectacle. Taking place on the 28th and 29th of May, this collaboration will see celebrated chefs Grégoire Berger and Eric Vildgaard join forces to serve an extraordinary “ten-wave” menu.

Berger, known for his modernist approach to cuisine, will incorporate elements of his global travels into dishes such as dry-aged duck, smoked leek, and foie gras. Vildgaard, on the other hand, will showcase his intricate and elegant craftsmanship through dishes such as “shish kebab” of scallop from Frøya, white currants and rose, and the renowned rosette waffle with shrimp and Baerii caviar.

Located in Atlantis, The Palm, Ossiano is famed for its ocean-inspired ambience and a progressive fine-dining experience. Its commitment to showcasing world-class produce is evident in its menu, and Berger’s return to the helm of the kitchen signals a new chapter for the restaurant.

The collaboration with Jordnær, a Copenhagen-based restaurant which achieved two Michelin stars within three years, is another testament to Ossiano’s commitment to deliver unique culinary experiences. Widely recognised for its gastronomic excellence, Jordnær’s inclusion on The World’s 50 Best Restaurants list 2022 marks its position as one of the world’s leading restaurants.

The two-night event is set to deliver a menu highlighting the chefs’ shared respect for seasonality, terroir and artisanal produce. It promises a culinary journey which intertwines the stories of Berger and Vildgaard, both of whom have transformed personal adversities into culinary triumphs.

Berger, originally from Brittany, France, is a past winner of the S.Pellegrino Young Chef competition. Vildgaard, on the other hand, has transitioned from a troubled past to become one of Copenhagen’s most exciting chefs. This collaboration is not only a convergence of culinary talents but also an inspiring testament to their remarkable personal journeys.
