Crosta Mollica launches Collezione Romana pizza range with immersive exhibition at Serpentine’s The Magazine

UK-based Italian food brand, Crosta Mollica has produced a new range of wood-fired sourdough pizzas this September: Collezione Romana presents 32cm pizzas inspired by iconic Italian regions, and is now available in major UK supermarkets. To celebrate the launch, the brand is hosting an immersive exhibition at The Magazine restaurant at The Serpentine on Wednesday 1st October.

Crosta Mollica will transform the restaurant into a temporary gallery space, which they have dubbed Galleria Collezione Romana. Visitors will be able to explore three multisensory installations, each themed around one of the pizzas in the range, and sample both the food and its accompanying wine. A curated gift shop featuring Italian-themed items will conclude the experience.

The Collezione Romana range includes three pizzas, each developed to reflect the culinary traditions of a specific Italian locale. All pizzas are made in Italy, slow-proved for 24 hours, and cooked in a wood-fired oven for bases that are described as thin and crisp, with a “golden, leopard-spotted crust” known as a cornicione. The Portofino is a variation on the classic Margherita, incorporating slow-roasted yellow cherry tomatoes, mozzarella di bufala and a basil salsa. It is paired at the exhibition with a Vermentino wine, selected for its citrus notes and minerality. Alternatively, the Bolzano pizza takes inspiration from the Alpine city of the same name, featuring salsiccia sausage, balsamic red onions and rosemary, and accompanied by a slightly chilled Montepulciano, chosen to complement the richness of the sausage and the acidity of the tomato base. The third pizza, the Bosco di Alba, pays homage to the woodlands of Alba in the Piedmont region. It includes summer truffles, grilled mushrooms and a roasted garlic crema. The recommended wine pairing is Barbera, a Piedmontese red with earthy, cherry notes.

A spokesperson for the brand said the event is intended to “experience pizza as you’ve never seen it before: as an art form, while tasting the collection and enjoying the wine pairings.” Attendance is by RSVP through Eventbrite, and spaces are limited.
