Apple TV+’s new documentary series Knife Edge: Chasing Michelin Stars has announced three notable Nordic restaurants – Jordnær and Aure in Copenhagen, and Knystaforsen in the forests of southern Sweden – will be featuring in an episode airing on 24th October. The eight-part show offers a behind-the-scenes look at the intense world of high-end gastronomy, focusing on the chefs and stories behind a diverse range of internationally acclaimed establishments.

The inclusion of the three Scandinavian chefs reflects the growing influence of the region’s cuisine on the global stage, with the restaurants representing a distinctive, nature-driven approach to fine dining. Jordnær, helmed by Eric and Tina Vildgaard, holds three Michelin stars and is located in the Danish capital. Celebrated for its refined Nordic cuisine and personal storytelling, the restaurant has gained widespread recognition for meticulous technique and emotional depth. Meanwhile Aure, in the waterbound Copenhagen district of Holmen, is the lovechild of Nicky Arentsen and Emma Nørbygaard, who explain their restaurant and food are inspired by the sea, earth and the forest. The Michelin Guide enthuses, “Its unassuming exterior and pared-back dish presentation belie the supreme skill and enormous amount of flavour”. Knystaforsen, by contrast, is located in a remote Swedish sawmill and is operated by Nicolai and Eva Tram. The restaurant is entirely fire-powered, with all cooking done over open flames, and is rooted in a philosophy of elemental, seasonal cuisine.

The series, executive produced by Gordon Ramsay and hosted by Jesse Burgess of foodie Instagram vlog Top Jaw, spans seven countries and explores the challenges and aspirations of chefs as they pursue, maintain or risk losing Michelin stars – widely regarded as the highest accolade in fine dining. The documentary provides rare access to the inner workings of the Michelin Guide’s secretive evaluation process, offering viewers a close look at the pressure and precision involved in achieving culinary excellence.

Knife Edge: Chasing Michelin Stars aims to illuminate the human stories behind the accolades, showcasing the passion and personal sacrifices that underpin the pursuit of gastronomic perfection. According to the series’ producers, the show examines the emotional and professional toll that the awards system can have on chefs and their teams.
