London-based salad chain Urban Greens has partnered with modern Indian restaurant group Kricket to launch a limited-edition menu item, The Kricket Salad, available across all six of its London locations from today until the end of the month. The collaboration brings together Will Bowlby, co-founder and executive chef of Kricket, and Urban Greens as part of the chain’s ongoing guest chef series, with the aim of translating contemporary Indian cooking into a fast-casual salad format.

The recipe draws on Indian culinary traditions, including the use of achaar – preserved pickles historically used to extend the life of vegetables during warmer months – alongside influences from channa pulao, a spiced chickpea and rice dish with roots in northern India. Bowlby described the thinking behind the recipe: “For our collaboration with Urban Greens, we wanted to reaffirm the fact that Indian food suits perfectly to hot weather. Drawing inspiration from the achaar (pickles) used to preserve vegetables in the summer, we offset a powerful preserved mango pickle with cooling yoghurt to dress our chicken.

“Venturing north, and taking inspiration from channa pulao, we combine chickpeas with a vibrant green chutney and serve it on red rice. A finishing of fresh herbs, crunchy peanuts and fried onions brings texture, all tied together with a spiky dressing of lime juice and chaat masala.”

His restaurant, Kricket was founded in 2015 with Rik Campbell, originally operating as a 20-seat pop-up in a shipping container at Pop Brixton. The restaurant group now operates four permanent sites in Soho, Brixton, Canary Wharf and Shoreditch. Its Soho location was awarded a Michelin Bib Gourmand in its first year of eligibility, a distinction it has retained since. Urban Greens, meanwhile, was founded by Ramjee, Houman Ashrafzadeh and Yannis Drivas, opening its first site in St James’s in 2019 and expanding to six locations across central London.

The Kricket Salad is available for dine-in, takeaway, and delivery at Urban Greens’ sites in Shoreditch, London Wall, High Street Kensington, St James’s Park, Canary Wharf and St Paul’s. It is served in bowls and trays that are 100% compostable, with fully recyclable lids.

Urban Greens co-founder Rushil Ramjee explained: “With our Guest Chef series, we’re focused on collaborating with chefs and restaurants who share our belief in bold, ingredient-first cooking. Kricket felt like a natural fit – their food has real depth and precision, but also a vibrancy that translates perfectly into a salad.
