A Wong to reopen next week with new show kitchen and China-inspired tasting menu
A Wong, Andrew Wong’s two-Michelin-starred Chinese restaurant on Wilton Road in Pimlico, will reopen next Saturday after a complete refurbishment. It closed in August to rebuild both the kitchen and the dining room, and now returns with a redesigned interior, a new show kitchen and a fresh tasting menu inspired by contemporary fine dining in China.
Wong took over his parents’ restaurant in 2012 and renamed it A Wong after them – Annie and Albert. In 2021 it became the first Chinese restaurant outside Asia to receive two Michelin stars.
The new menu is a reworked version of the Collections of China tasting selection, which Wong began developing before building work started. Drawing on the chef’s own research in Beijing and Shanghai, it looks at what tradition means in modern Chinese cooking and how classical techniques have been adapted in leading establishments across the country.
The dishes focus on textures and flavours that are valued in China but seldom found outside the diaspora, such as slow-simmered stocks seasoned with aged ingredients like fermented soy and tangerine peel, collagen-rich ingredients prized for their soft texture, the elastic bite – known as “Q” – of hand-pulled noodles, fish stewed in clay-jar mother brines and a range of pickles.
Plates include Stuffed Sea Cucumber with Prawns and Cantonese Crispy Pork Skin and a Whole Pickled Chilli Steamed Turbot. There’s a Milk Less White Fish Broth, Pineapple and Beef Candied Floss and Chilled Sweet Potato Noodles with Red Sugar and Jujube Syrup. Also featuring are a Century Egg with Pickled Ginger and Chilli Chutney and a Whole Shredded Baby Shicken Salad with Rehydrated Bean Curd Sticks.
Diners who were fans of the dishes from the previous tasting menu will be pleased to know they can rediscover them in Collections of A Wong, and the à la carte dim sum lunch remains unchanged.
The dining room has been reorganised around the new kitchen: a glass panel opposite the reception looks directly into it, and a row of tables on the left is positioned to face it. To the right are a 12-seat private dining room and further seating along a curved banquette. The new space was designed with Gareth Sefton of SHW Design and includes plate glass display windows so guests can watch the chefs at work.
The interior is by the London and New York-based practice Michaelis Boyd. It features twilight blue velvet banquettes and honey gold Art Nouveau-inspired chairs, along with walnut-stained oak flooring, walnut and burr elm joinery, jade-coloured tiles and marble-veined worktops for an overall luxurious finish.
Two artworks have been commissioned for the space. John Reyntiens Studio, the London-based stained-glass specialist, has made a 180cm circular ceiling light based on the Manzhou windows of Guangzhou’s old dim sum houses. Interestingly, although the piece is flat, it is designed to appear convex when lit. The French artist Claire Basler has also painted a five-panel mural of landscapes and flowers that runs the entire length of one wall, commissioned with support from the Lee Kum Kee family.
The reopening promises to be a decadent and exciting experience that’s aptly summed up by Wong, who says, “It’s not about recreating the classics, it’s our exploration into craft, cuisine and table culture.”
