Tucked away beneath Michelin-starred Frog by Adam Handling, Eve Bar is one of London’s most innovative cocktail bars. Inspired by the chef’s favourite cocktail – The Perfect Manhattan, which is made with five ingredients – Marco Grisafi and Giulia Gazzetto devised a menu around the number five (V in Roman numerals): five bartenders, with five unique tastes and five different stories, drawing on five key spirits, all combined to create one beautifully balanced menu.

The menu itself is divided into five sections: Agave, Juniper, Grain, Malt & Corn and Sugar Cane. Each is represented by three cocktails, the spirits are used in diverse ways that showcase the versatility of the liquid, explore complementary flavours and experiment with exciting methods and ingredients. As with all of Adam Handling’s venues, sustainability is at the forefront and the link between bar and kitchen, both conceptually – through methodology and to eliminate waste – is a close one.

Savoury notes and culinary ingredients are prominent throughout the menu. For example, the Brusketta Martini is a combination of sourdough vodka, Ginepraio gin, tomato, rosemary and brine, while the 24 Carrot combines Discarded Chardonnay vodka, Timur berry, rhubarb and carrot to create a juicy aperitif. Double Dutch uses smoked butter distilled gin, maple and chocolate to create a malty, buttery flavour, and Cereal Killer is the ultimate creamy evocation of breakfast: 15 Bulleit bourbon, rum, malt, coconut, vanilla and feuilletine.

Elsewhere on the menu, guests will find Perfect Three Cherries, Eve’s signature twist on a Perfect Manhattan that includes all parts of the cherry, created especially for Adam Handling. The cherry stones have been lightly toasted to bring out almond notes, then infused into sweet vermouth. Cherry blossom-flavoured dry vermouth, adds a floral touch and three cherries – steeped in whiskey – with a blend of spices provide the perfect boozy garnish.

As with all in-house experimentations including milk washing and distilling, the in-depth processes that make this menu so special take place in Eve Bar’s state of the art cocktail lab, a glass lab within the bar, where the menu’s innovative components are made.

Complementing Eve’s cocktails is an array of bar snacks, created by the team upstairs at the Frog. From tasting snacks such as beef tartare with kimchi, Egg, bacon and maitake and Black cod, to bar snacks like cheese doughnuts and waffles and beetroot, the bar food is the perfect accompaniment to the drinks.
