David Carter to unveil Greek-inspired restaurant OMA in Borough Market

David Carter, renowned for founding SMOKESTAK and co-founding Manteca, will open the doors of a new Greek-inspired restaurant named OMA on Tuesday, 16th April. Situated in the heart of London’s Borough Market, OMA, meaning raw in Greek, will feature an innovative menu influenced by the cuisine of the Greek isles and the coastal areas around them. The restaurant, occupying a meticulously designed space on the first floor, will boast a crudo bar and an open-plan, live-fire kitchen.

The interiors, designed by Box 9, draw inspiration from the rugged landscapes of Greece, incorporating a colour palette of eucalyptus, stone, and dark wood. Natural materials have been used throughout the space, comprising a daylight-flooded dining room, custom-crafted windows reaching to the full height of the building, and a bar that extends out onto a covered terrace overlooking Borough Market. Heating is provided on the terrace to ensure warmth throughout the year.

Jorge Paredes, previously executive chef of Sabor, will take the helm in the kitchen, working alongside Carter. Nick Molyviatis, former head chef at Kiln, has contributed to the menu development for the launch. The menu will start with shareable plates such as Hung Sheep’s Yoghurt with Salt Cod XO Sauce and Hummus Masabacha. The dishes can be accompanied by a wood-fired bread selection made from Wildfarmed grains and developed by Eyal Schwartz of E5 Bakehouse, ranging from açma and malawah to laffa flatbreads.

The raw bar will offer a rotating menu, including Gilthead Bream with Jalapeño Aguachile and Yellowfin Tuna with Clementine. Classic and reimagined Aegean recipes will also star on the list, including Santorini Fava with Capers and a Greek Salata with Carob Rusks. The fire section will include dishes such as Butterflied Red Mullet with Red Miso Butter and Skewered Cornish Squid, complemented by simple desserts like Olive Oil Ice Cream.

OMA’s wine list, curated by Emily Acha Derrington, will focus on Greek wines and native grape varieties, as well as an assortment of labels from islands like Corsica and coastal regions of Europe and South Africa.

Located directly beneath OMA, AGORA, its sister restaurant, offers a no-reservations dining experience inspired by the lively street markets of Athens. AGORA presents a menu centred around dishes from a custom-built charcoal rotisserie, including wood-fired flatbreads and a selection of meats marinated in traditional Greek seasonings.

David Carter expressed his excitement about opening OMA and AGORA, stating that the restaurants aim to capture the warmth and romance of the Greek isles and the bold flavours found in Athens’ streets and markets. OMA will being accepting reservations from Friday, 22nd March.
