Madrid is hosting the ninth edition of the In Residence culinary event, which brings renowned international chefs to the Spanish capital for a limited time only. Starting from Wednesday, 10th of April, and running until Sunday, 14th of April, the programme will feature talents Tim Flores and Genie Kwon, the chef-owners of Kasama, the first Filipino restaurant to be awarded a Michelin star. Situated in the East Ukraine Village neighborhood of Chicago, Kasama is recognized for its innovative approach to Filipino cuisine, seamlessly blending traditional recipes with modern culinary techniques. The duo’s pop-up in Madrid will take place at Semilla Food Studio, located on Calle José Ortega and Gasset 67, offering nine exclusive services to 16 diners each, around a shared table.

The event, organized by the gastronomic consultancy Mateo&co, is part of the In Residence series, which aims to introduce Madrid’s dining scene to the flavors and techniques from some of the world’s most celebrated kitchens. This year’s edition, which continues the tradition of the In Residence Sessions, promises a more intimate setting with shorter residencies spanning several days throughout 2024. The Kasama pop-up will feature a set menu priced at €250, including a wine pairing from the Rioja region, and marks the third session of the year.

Kasama has gained international acclaim not only for its Michelin star but also for its recognition in publications such as the Chicago Tribune and Esquire, which highlighted the restaurant’s exceptional take on Filipino cuisine. Opening in July 2020, the establishment initially started as a bakery, with the aim of making Filipino food accessible to those unfamiliar with the cuisine. It later expanded its offerings to include a tasting menu at dinner, quickly earning a spot in the international gastronomic panorama.

Madrid’s food enthusiasts will have the unique opportunity to experience Kasama’s acclaimed menu, a testament to Flores and Kwon’s dedication to elevating Filipino cuisine on the global stage.

The calendar of In Residence Sessions for the next months includes appearances of chefs from all over Europe and the U.S., bringing to Madrid Michelin proposals from other parts of the world. Among the upcoming save-the-dates, there are Osip (Sommerset, UK), Kadeau (Copenhagen, Denmark), the trattoria Santo Palato of Rome, and the cuisine of the chefs of Contra and Wildair in New York, which ten years ago started a gastronomic revolution in the Lower East Side.
