Chef Ciccio Sultano has officially welcomed Chef Riccardo Canella to the Duomo restaurant team in Ragusa Ibla, Sicily. Canella, with his extensive international experience, is set to collaborate with Sultano on the menu development for the esteemed two Michelin-starred establishment. This partnership marks a significant moment for Duomo, promising to build upon its reputation for innovative Sicilian gastronomy.

Duomo, under the creative leadership of Chef Patron Ciccio Sultano, has been at the forefront of exploring Sicily’s diverse culinary heritage. With a focus on sourcing lesser-known local ingredients, the restaurant has consistently delivered menus that celebrate the island’s unique flavours and ecosystems. Chef Canella’s arrival is expected to further enhance this tradition, adding his own international flair and expertise to the mix.

The two chefs, having met by chance at an industry event, have developed a professional synergy that has now culminated in this collaboration. Canella, originally from Veneto in northeast Italy, brings a wealth of experience from his time working in renowned kitchens around the world, including the three-Michelin-starred Noma in Copenhagen. Although he has been influenced by various regional cooking styles, this role at Duomo marks his first culinary venture in Sicily.

Both Sultano and Canella are planning an ambitious exploration of Sicily’s gastronomic bounty. Their aim is to delve into the island’s various ecosystems, identifying and cataloguing ingredients that reflect the local culinary heritage. This research is driven by a desire to adapt to the impacts of climate change by focusing on sustainable, locally-sourced produce. 

Chef Sultano expressed his enthusiasm for the collaboration, highlighting the importance of adapting to environmental changes while honouring Sicilian culinary traditions. “We are always building on our experience and looking to the future. Riccardo’s decision to join us represents an exciting new chapter for Duomo, and we are fortunate to have Sicily’s rich natural resources at our disposal,” he stated.
