Chef Merlin Labron-Johnson to open new Osip in rural Somerset

This summer, celebrated chef Merlin Labron-Johnson is set to open the doors to a new iteration of his Michelin-starred restaurant, Osip, in the picturesque setting of rural Somerset, just outside the village of Bruton. Scheduled for August 2024, the launch promises a fresh take on Labron-Johnson’s acclaimed West Country field-to-plate philosophy, offering both a dining experience and accommodation. The new venue, situated in a thoughtfully refurbished 16th-century inn near Castle Cary, aims to provide guests with an enhanced connection to the local land and produce.

Chef Merlin Labron-Johnson, known for his commitment to sustainability and seasonal produce, has found a new and permanent home for Osip, enabling him to further develop his culinary vision. With the support of investors Johnny Smith and Daniel Willis, established London restaurateurs, the new freehold site allows for an expansion of the original ethos. The kitchen’s close relationship with nearby farms and orchards ensures that almost all ingredients are locally sourced, emphasising biodynamic practices and seasonal availability.

The restaurant’s menu is an ever-evolving collection of dishes presenting an experience that changes with the light, season, and time of day, reflecting the chef’s passion for hospitality, his deep connection to the land and his innovative approach. Among the highlights, there will be Herb Broth served with crudités of farm vegetables, Gnudi with Peas, broad beans and smoked whey sauce, Potato Brioche brushed with lamb fat, whipped butter, Fruit Toast topped with melted Tunworth Cheese and finished with honey and truffle, and Melon and Cucumber Sorbet, freshly foraged native herbs, a selection of farm vegetables and tempura potato. The beverage list continues this philosophy, comprising wines from small-scale, sustainable growers, local spirits, and traditional ciders, including Osip Cider, annually produced in collaboration with Martin Berkeley of Pilton Cider.

Labron-Johnson’s journey, from his early culinary education in Devon to international experiences and the success of his London ventures, Portland and Clipstone, has culminated in the creation of Osip. Awarded its first Michelin star in 2021, followed by a green star in 2023, the restaurant’s evolution into its new home marks a significant milestone for the chef and his team.

The new Osip, located at 25 Kingsettle Hill, Hardway, Bruton, will host up to 38 covers and operate dinner services from Tuesday to Thursday, with lunch and dinner available from Friday to Sunday. Online bookings for the new venue are now live.
