Margo restaurant set to open in Glasgow this October

New restaurant Margo is scheduled to open its doors on Monday, 28th October 2024 in Glasgow. Located at 68 Miller Street, the establishment is the latest addition to the city’s dining scene from the Scoop Restaurants Group, known for their popular venues Ox and Finch and Ka Pao.

The restaurant will feature a menu crafted by Glasgow native Robin Aitken, who rejoins Scoop after gaining international experience and contributing to the success of both Ox and Finch and Ka Pao in the city. Aitken’s menu at Margo will focus on snacks, small plates, and sharing dishes that showcase seasonal produce, with an emphasis on Scottish seafood and in-house butchered meats. The list will include options like Smoked Haddock Churros and West Coast Crab Tart, complemented by a selection of desserts such as Lemon and Sorrel Posset and Chocolate Nemesis.

Aitken, who first joined Ox and Finch in 2014, expressed enthusiasm about his role at Margo, noting, “We’ll be pushing things further in the kitchen, baking our own breads, making fresh pastas and also doing some in-house butchery.” The restaurant aims to evolve from its predecessors while retaining the qualities that have made Scoop’s establishments popular over the last decade.

Margo will also offer a comprehensive drink menu, including signature frozen martinis and a wide selection of classic and biodynamic wines. The design of the interiors, a collaboration with Stuart Black of Mosaic Architecture and Design, presents bespoke furniture and a mix of industrial and traditional elements, creating a warm and inviting atmosphere. The space entails a large open kitchen with counter seating and various dining settings, from banquettes to booths.

Jonathan MacDonald, Managing Director of Scoop Restaurants Group, highlighted the connection between Margo and its sister restaurant Ox and Finch: “Margo will be an evolution of our first restaurant, Ox and Finch, which has just celebrated its 10th birthday. Both restaurants share the same ethos of being relaxed, accessible and fun, alongside a focus on quality.”

The front of house will be led by Paige Wilson, who has been instrumental in the success of Ka Pao since its opening. Wilson’s leadership aims to extend the group’s reputation for providing relaxed, friendly, and informed service.
