New restaurant Silva opens in Mayfair, blending Mediterranean and Japanese flavours

An exciting new restaurant named Silva is opening in Mayfair on 21st November, just in time for the festive season. The brand new dining spot draws its name from the Latin word for ‘forest’ and will be offering dishes that mirror the changing seasons. The interesting twist is that it will be blending Mediterranean and Japanese cuisines and thus create unexpected flavour combinations. Founder Daria Grebenyuk and her team have designed Silva to cater to the modern Londoner, with a menu that evolves from morning to evening.

The dishes will reflect the extensive travels and gastronomic experiences of its founder Daria, while head chef Slawomir Sawicki will bring his vast experience: his resume boasts names such as Eric Chavot and Galvin at La Chapelle. The front-of-house operations are managed by Marco Piroli, formerly of The Ivy Club and St Regis Florence, and Peter Prescott, known for his work at Boundary and Lutyens.

Silva’s breakfast menu promises a mix of light, healthy options alongside more indulgent options. Patrons can start their day with a variety of egg dishes and pastries or opt for something more substantial like a gratinated crab and Gruyère omelette or fluffy soufflé pancakes accompanied by white chocolate and lavender Chantilly. The lunch offerings include an extensive list of main courses such as a crispy fried egg atop parmesan cream and salmon with crunchy rice, ponzu, and shiso. 

As the day progresses into evening, the menu expands to include larger sharing plates. Highlights include a line-caught turbot with wakame beurre blanc and Chateaubriand served with wild mushrooms. The shift from day to night also transforms the atmosphere of the restaurant. During the day, the space is bright and airy, while evenings offer a cosy, intimate setting with a low-lit bar area designed for lingering conversations and relaxed dining.

The interiors of Silva have been meticulously designed by Grebenyuk herself in collaboration with Atelier Wren. Her aim is to create an environment that complements the woodland-inspired theme and the seasonal focus of the menu.

Silva is expected to become a new landmark in Mayfair, with a style that will likely be appreciated by many. Its emphasis on warmth and conviviality means that it will suit any occasion, at any time of day.
