Da Terra to host one-day gastronomic experience with chefs Rafael Cagali and Ivan Brehm

On 2nd May 2025, Da Terra will host a four-hands gastronomic event featuring a collaboration between its chef, Rafael Cagali, and guest chef Ivan Brehm from Singapore’s Michelin-starred Nouri. The one-day event, set in the multi-awarded restaurant within the historical Town Hall Hotel in Bethnal Green, will include both lunch and dinner services, offering a special eight-course tasting menu.

Chefs Cagali and Brehm, both originally from São Paulo, Brazil, will merge their distinctive culinary styles. The experience aims to showcase a blend of their roots and the global influences that have shaped their cooking philosophies. Dishes planned for the day include Poached Langoustines in Tahitian vanilla and Kampot pepper berry sauce, Pamonha with Caviar, and an innovative take on the traditional Brazilian fish stew, featuring Turbot Moqueca with Vatapá and Acarajé.

The collaboration is not just a reunion of two professionals but a celebration of their shared heritage and evolution in the culinary world. Chef Rafael Cagali shared his enthusiasm about working with Brehm: “I’m thrilled to be welcoming Ivan to Da Terra. We’ve been friends since our days at The Fat Duck and we always have fun when working together. There’s so much crossover in the way we approach cooking, and having the opportunity to create dishes together and explore that synergy will be creatively nourishing, both for me and my team.”

Chef Ivan Brehm also commented, “I’m looking forward to our four-hands service at Da Terra with great anticipation. I’ve long admired what Rafael achieves in his restaurant, and after so many years, it will be a pleasure to reunite in London and cook together once again.”

In addition to the food, the event will feature a carefully curated wine pairing. Nicole Roche, Beverage Director at Nouri, and Maria Boumpa, Wine Director at Da Terra, will collaborate to pair unique wines and Nouri’s range of fruit, whey, and vegetable wines with the dishes, enhancing the dining experience with their international expertise.
