Award-winning bar Lyaness, located in the Sea Containers London hotel on South Bank, will be hosting a week-long collaborative menu with Indian restaurant BiBi from Monday 9th to Friday 13th March. The partnership brings together bartender Ryan Chetiyawardana (known as Mr Lyan) and chef Chet Sharma in a joint exploration of South Asian ingredients, aiming to highlight the origins of spices and the evolving relationship between food and drink. 

A bespoke menu has been co-created by the two that merges BiBi’s modern Indian cuisine with Lyaness’s inventive cocktails. Dishes will include Oysters with Pear Jal Jeera, Lamb Neck Nihari with Kulcha and Cherry Blossom & Chocolate Mousse. These will be paired with three cocktails crafted by the Lyaness team, using ingredients such as cassia leaf, BiBi’s house spice blends and fermented green peppercorn with Lakadong turmeric.

The occasion marks Lyaness’s first fine-dining menu takeover, and reflects the experts’ shared interest in ingredient provenance and flavour innovation. Their seven-day partnership is rooted in a decade-long friendship between Chetiyawardana and Sharma – something symbolised in their intention the keep one cocktail created with BiBi’s ingredients on the Lyaness menu, and a Lyaness-inspired cocktail on BiBi’s drinks list. According to the organisers, the menu is intended as more than a simple takeover, instead representing “a unified philosophy that food and drink should be considered as one cohesive experience, with flavours and ingredients working interchangeably”.

At the opening night, Chetiyawardana and Sharma will host a panel discussion at 5pm. Their focus will be on the provenance of spices and the development of flavour in Indian cuisine prior to the introduction of chilli, aiming to “demystify ingredient use across both drinks and dishes”.

Sharma commented: “I am delighted to be working with my dear friend Ryan on this project, exchanging flavours and developing amazing cocktails from our ingredients. I have long admired Ryan and his team’s approach to building complex and exciting flavour profiles, and I look forward to having a slice of his expertise enriching our cocktail menu over the coming months. We’re honoured by the opportunity to bring a bit of BiBi to his guests in return.”

Chetiyawardana added: “Chet has been a friend and inspiration for over a decade now, and I was so excited to see BiBi finally come to fruition – it’s no surprise that it became one of my favourite restaurants in the world, and a shining light on where to see flavour and hospitality excellence. We were eager to continue our partnerships at Lyaness, which have centred on collaborating with pioneers and thought leaders, working with BiBi to create an event for our guests. Centering on some of the amazing ingredients the team source, we’ll be creating a marriage of food and drink that will be distinct to what you’d usually find in either venue.”

The menu is priced at £75 for three cocktails and three dishes. The collaboration will run each evening from 5pm to 9pm, and bookings are required in advance.
