Trullo chef Conor Gadd to open first solo restaurant, Burro, in Covent Garden this March
Conor Gadd, chef and co-owner of Islington’s Trullo, will open his first solo restaurant, Burro, in Covent Garden on 11th March. The new establishment, whose name means “butter” in Italian, will offer a menu inspired by Italian cooking and British produce. A soft launch is scheduled from Friday 6th to Sunday 8th March, during which guests can book lunch and dinner at a 50% discount.
Gadd, who has been at the helm of Trullo for over 16 years, says Burro aims to reflect the “generous, produce-led cooking and warm hospitality” that characterises both his Irish roots and his love for Italian cuisine. The menu draws on the core principles of Italian cooking: generosity, care and a focus on quality ingredients. Antipasti options will include salumi, house-made focaccia, Venetian chicken livers on toast, caponata and cuttlefish stuffed with breadcrumbs and anchovies. Pasta dishes are central to the offering, with classics such as duck ragù made from Aylesbury duck and tortellini in brodo, influenced by Gadd’s time in Bologna. A take on fettuccine alfredo will feature egg-rich pasta, butter and 36-month-aged Parmigiano Reggiano.
Main courses will showcase produce from British farmers and fishermen, with dishes such as Vitello al Burro, Dover Sole with Prosecco and Caviar and a Lobster Acqua Pazza using British seafood. Desserts will include tiramisu doughnuts and almond cake served with Marsala wine from Sicily.
The drinks menu, curated by head wine buyer and sommelier William Amherst, will focus on Italian wines, particularly from Piedmont and Tuscany, with 200 to 300 bottles available. There will also be a concise Champagne selection, classic cocktails, Italian amari and rare spirits.
Designed by Lisa Helmanis of Day Studio, the restaurant’s interior combines elements of an Irish country house kitchen with a 1950s Italian bistro. The space features faded red and yellow walls, burgundy marble, velvet banquettes and artwork including a large canvas by Dan Ferguson and photographs of the Tuscan Butteri.
“Never in my wildest dreams did I imagine opening a restaurant in Covent Garden,” said Gadd. “But as soon as I saw the room – and the courtyard – I knew it was an opportunity I couldn’t miss. It’s been a labour of love with a brilliant team, and we can’t wait to welcome guests with some amazing food served in the warmest, most elegant of rooms”.
