This March, Chishuru, the Michelin-starred West African restaurant led by chef Adejoké Bakare, will host a collaborative dinner with Jan Ostle and Mary Wilson of Wilsons, Bristol. At the Fitzrovia location, the two restaurants will bring together distinctive elements of each of their culinary philosophies, combining Wilsons’s produce-driven dishes with Chishuru’s West African influences.

The special evening will feature a tasting menu that blends classic Wilsons plates – centred on vegetables, fruits and herbs from the restaurant’s market garden – with Chishuru’s signature style. Dishes scheduled to appear range from Ose Ji with Radishes and Crispy Kale to Fish Head SoupMoinmoin with Egg and Wiltshire Truffle and Offal Flatbread with Broad Bean Tops. For dessert, guests will be served a Wilsons favourite: Herb Sorbet and Marshmallow, in addition to a Chocolate Tart.

The drinks offering for the evening will also reflect the collaborative spirit. The wine list will be curated exclusively from small French producers, selected by chef Bakare and sourced through UK importers. Cocktails will present West African interpretations of classic drinks, such as a Spiced Okra Martini (with Pedro’s ògógóró with vodka, brine, jalapeño and verjus), as well as a Yaji Pineapple Margarita, made with mezcal, pineapple and ginger shrub, triple sec, lime juice and yaji peanut spice.

The team explains that the collaboration was inspired by a longstanding friendship between Bakare and Ostle, which began when Bakare first visited Wilsons in Bristol. “They have stayed in touch ever since that first visit, plotting and planning a four-hands dinner,” they said.

Wilsons, which holds both a Michelin star and a Green Star for sustainability, is known for its emphasis on home-grown and foraged ingredients. The partnership will allow London diners a rare opportunity to experience Wilsons’s culinary approach without leaving the capital.

Sittings will start at 6pm on Tuesday 24th March at Chishuru, with tickets priced at £105 per person.
