Manifest Restaurant and Bar in Liverpool will collaborate with Slow Food UK this month to host a special one-off dinner on Sunday 29th March. The event, taking place at Manifest’s premises on Watkinson Street, aims to highlight the values of sustainability, biodiversity and food heritage by serving a five-course menu featuring traditional and endangered ingredients. The dinner will begin at 4pm and is open to the public.

The collaboration brings together Manifest’s co-owners, chef Paul Durand and sommelier Charlotte Jones, with Shane Holland, executive chairman of Slow Food UK. The evening is designed to reflect the shared philosophies of both organisations, particularly their focus on local, seasonal produce and responsible food sourcing. Manifest has developed a reputation for its ingredient-led approach and its relationships with farmers and producers across the Northwest, aligning with Slow Food’s mission to promote food that is “good, clean and fair”.

The occasion will open with a welcome and presentation from Holland, who will discuss the global impact of the movement. Slow Food is an international grassroots organisation with thousands of members worldwide, dedicated to linking the enjoyment of food with a commitment to community and environmental responsibility.

Following the introduction, guests will be served a five-course set menu created by Paul Durand and the Manifest team. The dishes will feature ingredients from the Ark of Taste, a Slow Food initiative that catalogues and protects traditional and endangered foods. The menu includes poached Colchester Oyster with Preserved Forced Yorkshire Rhubarb, Altringham Carrot Tops Pesto with Kentish Cobnuts, Brill with Musselburgh Leeks and Morecambe Bay Shrimp, Herdwick Lamb Scouse, Double Curd Lancashire with Bara Brith and Marmalade and Brown Butter Custard with Heritage Apple and Sheep’s Yoghurt.

An optional wine pairing, selected by Charlotte Jones, will also be available. All wines served will carry the Slow Food logo and have been chosen to complement the menu and reflect shared values around responsible production.

Tickets are priced at £80 for the five-course menu, with an optional wine pairing available for an additional £65. The organisers note that seats are limited and the event is intended as a unique opportunity to experience a collaboration rooted in local produce and culinary heritage.
