Peruvian chef Jaime Pesaque brings Mayta flavours to Ricard Camarena restaurant for one-night collaboration in Valencia

Peruvian chef Jaime Pesaque, the culinary mind behind Lima-based restaurant Mayta, hosted a special guest dinner last night at Ricard Camarena Restaurant in Valencia, Spain. The one-night collaboration saw Pesaque take full creative control of the menu, working alongside host chef Ricard Camarena and his kitchen team to execute it. The event marked a notable meeting of two distinct culinary traditions – Peruvian and Spanish – at one of Valencia’s most respected fine dining establishments.

Ricard Camarena Restaurant, which holds two Michelin stars and is widely regarded as one of the leading restaurants in the country, provided the setting for what promised to be an ambitious cross-cultural dining experience. Camarena’s cooking is rooted in the produce and flavours of its region, making the contrast with Pesaque’s Peruvian-led approach all the more striking.

Chef and founder of Mayta, Pesaque has earned considerable recognition for his modern interpretation of the cuisine from the region. He draws on indigenous ingredients and traditional techniques, reframing them in a contemporary fine dining context. His work has positioned him as one of the more prominent figures in Peru’s thriving restaurant scene, which has gained significant international attention over the past decade.

Guest chef dinners of this kind have become an increasingly common format at high-profile restaurants across Europe, offering diners the opportunity to experience internationally recognised chefs outside of their home kitchens. For Ricard Camarena Restaurant, the evening continued a tradition of engaging with chefs from beyond Spain’s borders.
