Michelin-starred restaurant Galvin La Chapelle in Spitalfields will host a one-night-only collaborative dinner on Tuesday 26th May, bringing together chef director Arturo Granato and the Michelin-starred Tom Brown for a shared tasting menu designed to showcase the distinct cooking styles of each. Hosted by restaurateurs and brothers Chris and Jeff Galvin, the event will take place from 7pm and is priced at £125 per person, with an optional wine pairing available at an additional £75.

The evening will feature a menu that combines Brown’s ingredient-led, seafood-focused cooking with Granato’s Mediterranean-influenced approach. Brown, who is originally from Cornwall and trained under two-Michelin-starred chef Nathan Outlaw, opened his eponymous restaurant Tom Brown at The Capital in April 2025, earning a Michelin star in February 2026. Italian chef Granato, with over two decades of experience in Michelin-starred kitchens across Europe, has led Galvin La Chapelle since 2022, while the restaurant has retained both its Michelin star and three AA Rosettes.

The menu opens with a selection of snacks, including Brown’s Lobster Toast with lardo and crispy chilli oil and Granato’s Duck Liver Parfait with spicy cherries and popcorn crumb. The Cornish chef’s first course, a Bream Tartare with quail egg, soy and radish, will be paired with a 2022 Tavel Vieilles Vignes from Tardieu-Laurent in the Rhône Valley. He also takes responsibility for the fish main course – a Crab Custard with heritage tomatoes and wasabi – paired with a 2023 Chardonnay from Danbury Ridge Estate in Essex.

Granato’s main course features Welsh Lamb with oyster, miso and stuffed morel, paired with a 2020 Syrah from Lismore Estate Vineyards in South Africa’s Western Cape. The meal concludes with his Coconut Parfait with camomile, honey and white chocolate, paired with a 2022 Château Laville Sauternes from Bordeaux.

Galvin La Chapelle is housed in a former Victorian school building and has held a Michelin star since 2011. The restaurant group, founded by the Galvin brothers, also operates Galvin Bistrot & Bar in Spital Square and Galvin Green Man, a Bib Gourmand country pub in Chelmsford, Essex.

Prior to his current role, Granato served as head chef at Club Gascon, where he retained its Michelin star and three AA Rosettes, and as executive chef at Avista Restaurant, where he earned and maintained three AA Rosettes from 2016. His earlier career included formative positions at The Greenhouse and Hotel Bauer in Venice.

Brown began his career in the South West, including a period at Rick Stein’s, before rising to head chef at Outlaw’s restaurant at The Capital Hotel, where he retained its Michelin star. He subsequently opened Cornerstone in Hackney Wick in 2018 before launching his current restaurant.
