Mayfair Mediterranean-inspired restaurant Silva has appointed Charlie Dilworth as its new head chef, as it celebrates its first anniversary in Bruton Place. The 29-year-old Kentish chef joins the restaurant from a Michelin-starred background, with a new menu launching on 28th April to reflect his appointment.

Dilworth comes with a pedigree that includes most recently senior sous chef at Lita in Marylebone, which holds one Michelin star. During his wider career he has held a position as head chef at Boys Hall in Ashford, Kent, as well as roles at The Good Shed in Canterbury, The Radnor Arms and Rocksalt in Folkestone, the latter two under Mark Sargeant.

Owner Daria Grebenyuk said of the appointment: “Silva has evolved over its first year, and Charlie is an ideal addition to the team, bringing a fresh perspective to the kitchen. He has embraced our modern Mediterranean style with enthusiasm, skill and creative input. His debut menu is full of flavour, seasonality and visual impact.”

The new menu will feature an à la carte selection alongside a set lunch option priced at £29 per person for two courses, and a weekend brunch offering. A number of existing dishes that have proven popular with diners will be retained, among them Cornish Crab Raviolo with langoustine sauce, Crispy Fried Egg, Girolles and Parmesan Sauce and a Basque Cheesecake.

New additions to the menu are White Asparagus, Cacio e Pepe Sauce, Olive and Preserved Lemon, as well as Diced Beef Fillet, Quail’s Egg, Tarragon, Pickled Mustard Seeds and Native Lobster, Carrot, Smoked Garlic, Cucumber and Bisque. There’s also Braised Ox Cheek Ragù, Mafaldine, 24-month Aged Parmesan and Halibut with Orkney Scallop, Whipped Ratte, Grapes and Chicken Butter Sauce.

Dilworth commented on his new position: “Being appointed head chef at Silva is an incredible opportunity. The team and I are here to bring something fresh and exciting, but also to respect the standards that make this restaurant so special. My focus is simple: amazing ingredients, consistency and an experience people want to come back for.”

He is not the only new addition to the kitchen. Phoebe Elsam has joined as pastry chef, bringing experience from a number of notable establishments such as One Club Row, Harrods’ The Georgian Restaurant, 45 Park Lane and Scott’s of Mayfair. Elsam is also expected to introduce a new dessert menu in late April.

The restaurant is open Tuesday to Friday for lunch and dinner, with brunch also available on Saturdays and Sundays.
