London-based Mexican restaurant group Mestizo will host its annual Enchilada Festival across its Camden and Chelsea locations from the 27th April to 6th May 2025, offering diners ten distinct enchilada variations representing different regional and contemporary expressions of Mexican cuisine. The festival, which runs for a limited ten-day period, is designed to highlight the breadth of Mexico’s culinary heritage through one of its most recognisable dishes.

The menu has been developed around the idea that each enchilada reflects a specific cultural or geographical identity within Mexico. Dishes range from mole-based recipes and barbacoa with salsa borracha to lighter options incorporating citrus and hibiscus, giving the selection a scope that spans both traditional and more contemporary approaches to Mexican cooking.

Among the ten enchiladas on offer are the Enchiladas Cancún, drawing on the flavours of Mexico’s Caribbean coast, and the Enchiladas Tapatías, which originate from the state of Jalisco and are associated with the region’s mariachi and tequila traditions. Two mole variations are also featured: Enchiladas de Mole Verde, rooted in rural Mexican cooking and characterised by herbaceous complexity, and Enchiladas de Mole, a richer preparation that reflects the blending of Indigenous and Spanish culinary influences in Mexican history.

Also on the menu are Enchiladas Divorciadas, a dish served with both green and red sauces on the same plate, and a foundational preparation tracing the dish’s origins to pre-Hispanic Mexico, when tortillas were dipped in chilli as a basic form of sustenance.

The festival is a recurring event for Mestizo: the family-run group, born in 2004 and currently operating restaurants in both Camden and Chelsea, is committed to combine food service with a broader cultural programme intended to serve both London’s Mexican community and the wider dining public.
