Miami’s Coyo Taco to give away free tacos and margaritas at East London pop-up ahead of UK debut

Coyo Taco, the Miami-based Mexican restaurant chain, will host a one-day pop-up at Hoxton Arches in East London on Wednesday 3rd June, distributing hundreds of free tacos and frozen margaritas to members of the public ahead of its first UK restaurant opening later this summer. The event, which marks the brand’s debut in Britain, will run from 6pm until 9pm or while stocks last, at Arch 402.

The pop-up precedes the opening of Coyo Taco’s first UK site at The Broadway in St James’s Park, which was announced last month. The company has indicated plans to open up to 50 further locations across the UK in the coming years.

Attendees at the Hoxton event will be served two taco varieties: a Beef Birria made with slow-cooked beef, white onion, coriander, lime and a melted cheese crust, and a vegetarian option featuring grilled cauliflower in pumpkin mole, served in a cheese-crusted flour tortilla with aged cheese, pickled onion and avocado. Tortillas will be hand-pressed on site. Frozen margaritas will also be served free of charge, and a DJ will perform throughout the evening.

Coyo Taco was founded in 2016 in Miami’s Wynwood neighbourhood by Coyoacán native Alan Drummond, Sven Vogtland and chef Scott Linquist. The brand operates under what it describes as a “todo es fresco” – or “everything fresh” – philosophy, with dishes and drinks prepared on site using locally sourced ingredients. The company currently has seven sites in Miami and six further locations internationally, having expanded across South America and parts of Europe.

The restaurant has attracted a high-profile following in the United States, with reports linking the Beckham family among its regular customers.

Music and art form a central part of the brand’s identity, alongside community and charity engagement, according to information provided by the company. The Hoxton Arches pop-up will offer British customers an opportunity to sample the menu before the permanent St James’s Park restaurant opens its doors.
