London-based Indian restaurant group Masala Zone is marking its 25th anniversary with a new menu inspired by the Grand Trunk Road – the historic trade route that runs across the Indian subcontinent. The limited-edition range will be available across the chain’s branches from mid June till September, drawing on regional dishes, techniques and ingredients found along one of Asia’s oldest and most influential thoroughfares.

The Grand Trunk Road, which stretches from present-day Bangladesh through India and into Pakistan and Afghanistan, has shaped centuries of regional cooking, migration and cultural exchange. For its anniversary menu, Masala Zone has chosen to trace the culinary influences along the way, focusing on dishes and cooking styles that have historically sat outside the scope of the standard British curry house repertoire.

Among the new offerings are Changezi Fried Chicken, a recipe associated with Delhi and rooted in Mughal-era cooking traditions. From the Punjab region, there’s Dhaba Duck Egg Curry, reflecting the roadside dhaba eateries which have long served truckers and travellers. Bengal is represented by Chittagong Fish Croquettes, drawing on the coastal cooking traditions of what is now Bangladesh.

The menu places particular emphasis on regional techniques and lesser-known ingredients, referencing the range of communities and cuisines that developed along the trade route over centuries. The Grand Trunk Road has historically connected major cities including Kabul, Peshawar, Lahore, Amritsar, Delhi, Varanasi, Kolkata and Chittagong, with each stop contributing distinct flavours and methods to the wider culinary landscape.

Masala Zone first opened in London in 2001 and has since expanded to several locations across the capital, including Covent Garden, Soho, Piccadilly, Earls Court and Camden. It is part of the wider MW Eat restaurant family, which also operates Amaya, Chutney Mary and Veeraswamy, the latter widely recognised as the oldest Indian restaurant in the UK.

The anniversary selection will run alongside Masala Zone’s regular menu for the month.
