Michelin-starred restaurant Sushi Kanesaka will partner with Tokyo-founded florist Aoyama Flower Market this June for a five-day floral installation at its Park Lane location, marking the arrival of the summer solstice. The collaboration brings together two Japanese brands with shared interests in seasonality, craftsmanship and the principle of omotenashi – or hospitality.

Founded in Tokyo in 1989, Aoyama Flower Market takes an unusual approach to floristry and espouses a philosophy of incorporating flowers into daily life. The brand opened its first international store in Paris in 2015 and expanded to London with a location in Selfridges in 2018. For the partnership with Sushi Kanesaka, the team will create a series of bespoke arrangements inspired by the colours and traditions associated with early summer in Japan.

The installation will be visible throughout the restaurant. Sculptural arrangements will frame the omakase counter, while smaller floral displays will delight guests during the meal. A stem installation will provide contrast against the restaurant’s minimalist interiors, and the private dining room will feature its own arrangements. In addition to the spectacle, guests dining during the five-day event will receive a bespoke bouquet arranged by Aoyama Flower Market, designed to reflect the colours and character of the season.

Sushi Kanesaka, which opened in July 2023, is the first international outpost outside the Asia Pacific region by chef Shinji Kanesaka. The restaurant was awarded a Michelin star within its first year of operation and has retained the distinction since. It is led by head chef Hirotaka Wada, whose seasonal omakase menus follow the rhythms of the calendar and focus on ingredients sourced at their seasonal peak.

The partnership reflects a meeting of two Japanese disciplines. At Sushi Kanesaka, seasonality is expressed through the traditions of Edomae sushi and the sourcing of ingredients at the height of their freshness. At Aoyama Flower Market, the same principle is applied through the selection of blooms at their seasonal peak.

Commenting on the collaboration, Hirotaka said: “We are thrilled to be partnering with Aoyama Flower Market and bringing their beautiful floral artistry into Sushi Kanesaka. The collaboration will create a unique atmosphere throughout the restaurant, allowing guests to experience the beauty of early summer alongside their omakase. We hope it will create a memorable moment for our guests.”
