PABÚ, the Madrid restaurant run by chef Coco Montes, has received Wine Spectator’s 2026 Best Of Award of Excellence, which recognises the establishment as an internationally notable wine destination. The accolade, the second-highest given by the American magazine after its Grand Award, was conferred on more than 1,800 restaurants across 87 countries and territories in this year’s edition, with PABÚ among those representing the Spanish dining scene.

Wine Spectator’s Best Of list recognises restaurants where wine forms a central part of the dining experience, presenting more than 350 selections from established producers, broad regional representation and depth across vintages. PABÚ’s cellar holds almost 350 wines available by the glass and more than 850 bottles in stock, with particular emphasis on Spanish, Champagne and French wines. The restaurant describes its approach as “micro-seasonal cuisine”, in which the wine selection is intended to align with the food.

The wine programme is overseen by Patricia García Sánchez, PABÚ’s head sommelier. Under her direction, the list is adjusted in line with the kitchen’s output, with pairings changing daily and offered in a range of styles and formats. The cellar is organised according to the sensations evoked, rather than by designation of origin or grape variety. Housed in a glass-walled space visible from the dining room, it holds more than a thousand bottles. Alongside the wines, the restaurant offers ciders, spirits, cocktails made with seasonal fruits and herbs, and non-alcoholic alternatives prepared on site, with guests also able to bring their own bottles.

PABÚ opened in November 2023 and operates on a daily basis without advance preparation, making everything – from sourdough bread and pastries to ice cream – fresh each day. Its cuisine is described as French-inspired and Spanish in character, changing according to seasonal availability. A year after opening, the restaurant gained a Michelin star, and it received a Repsol Sun in 2025. This latest honour shows the restaurant continues to go from strength to strength.
