Why not celebrate in style this bank holiday weekend with an ultra special cocktail that’s easy to conjure up and will impress any dinner (or drinks) guests you might have.

When I say cheesecake you’re going to automatically think of a soft, oozing cream cheese layered biscuit-based cake. Original Greek cheesecakes and baked modern-day cheesecakes are somewhat different. They can also vary on what style you choose whether it be American, European or Italian. They use different cheeses and also different cooking techniques. But this is cheesecake à la Bethany. A cheesecake with a twist, a cheesecake cocktail!

Omit the cheese and add a delicious and potent mix of sumptuous liquor-based treats and you will be mistaken if you think it doesn’t taste like a cheesecake – a winner every time.

Blueberry cheesecake Martini

Serves 2

What you will need:

2 shots of Baileys liqueur 

4 shots of blueberry vodka

4tbsp double cream

1tsp vanilla extract

1tsp icing sugar 

Ice 

4 crushed digestive biscuits

Cocktail shaker or a Tupperware box

A handful of blueberries

2 Martini glasses

Whisk

Pyrex bowl

Method:

  1. Pour the vodka and Baileys into a cocktail mixer (of your choice) with the ice and shake vigorously.
  2. Gently pour this into a chilled Martini glass with a few cubes of ice in the bottom and some crushed blueberries, if you would like to add an extra layer.
  3. In a separate bowl, lightly whip the cream with the vanilla extract and icing sugar. When slightly firmer, gently spoon the mixture on top of the vodka mix and be careful that it doesn’t sink!
  4. Top this with some crushed biscuits and few more blueberries and serve ice cold with a light dusting of icing sugar.
