Sally Abé’s highly anticipated new venture Blue Boar has now opened at Conrad London St James. This is the first of four concepts that will launch at the hotel this year, the next one being a fine-dining restaurant called The Pem – inspired by suffragette Emily Wilding Davison’s pet name – with Emma Underwood as general manager.

The pub, which already existed under the same name, has been completely refurbished and can now capitalise on Abé’s four-year experience as head chef of London’s only Michelin-starred public house, the Harwood Arms.

Blue Boar’s menu aims to celebrate British seasonal produce, offering classics such as scotch eggs, fish and chips and the beloved burger. The latter is made from fallow deer and pork mince, and it’s paired with celeriac and bone marrow remoulade: this is clearly the go-to dish of this venture.

However, it’s not all pub food as we know it. There are several vegetarian and vegan options such as the Mushroom Sausage Roll with Pickled Walnut Ketchup, a vegan BLT, London Particular Soup and Lentil Shepherd’s Pie, with purple sprouting broccoli and black garlic gravy.

For those craving a steak, the Aged Shorthorn Rib Eye, with triple cooked chips, grilled mushrooms and bois boudran sauce, is sure to satisfy. Earl Grey and Chocolate Mousse, Buttermilk Panna Cotta and Apple and Almond Tartlet complete the sweet side of the lineup.

The ultimate pub experience is served up every Sunday with a roast – running from 12pm until 6pm – of Lake District Farmers meats, some of the best available in the UK.

On top of Blue Boar and The Pem, soon the hotel will see the opening of their first cocktail bar, The Hedgerow, where guests can enjoy an aperitivo.
