London restaurant chain Brother Marcus have opened SAHA, a summer-long counter pop-up at their Spitalfields location, where they will serve a rotating menu of Eastern Mediterranean-inspired sandwiches every Friday and Saturday. The project marks the group’s tenth anniversary and forms part of its wider campaign, The Road Home, which traces the kitchens, markets and traditions behind the brand’s food.

Located at Brother Marcus in Spitalfields Market, the pop-up will serve between 12pm and 5pm from the restaurant’s street-facing counter as a walk-up food destination (with limited pre-ordering available) aimed at work lunchers, market visitors and weekend shoppers. The menu has been developed by Nicole Pisani, former head chef at Ottolenghi’s NOPI and co-founder of Chefs in Schools, together with Oren Goldfeld, Brother Marcus’s head of culinary innovation and a fellow NOPI alumnus. It will change across June, July and August, drawing on cuisine from the Levant and the wider Eastern Mediterranean. Priced between £10 and £14, the new sandwiches reference regional staples such as sabich, ful medames, shawarma, balik ekmek, muhammara, toum, tahini, za’atar, sumac, flatbreads and pickles, with truly fresh bread.

Tas Gaitanos, co-founder of Brother Marcus, said: “SAHA is a really exciting project – passionate chefs sharing a love for the region. As part of our ten-year anniversary, we went back to the source, visiting Istanbul’s bustling street food scene where ekmek – sandwiches – bring the streets to life with their smells and flavours. It’s about generous food, shared culture and the energy of the Eastern Mediterranean.

“For us, food was always the bridge to creating a connection between great food and cultural experiences. This pop-up lets us tell those stories in a more immediate, street-food-inspired way. It’s accessible, fun and full of flavour, but there is also real depth behind the dishes and the people who have shaped them. Expect bread baked to order and vibrant flavours.”

Brother Marcus began as a neighbourhood brunch spot and now operates eight central London restaurants, along with Kamara, its cocktail bar in Soho. The SAHA pop-up runs alongside other anniversary activity, including a founder film entitled The Road Home, regional specials, supper clubs and a forthcoming Brother Marcus Recommends guide.
