Original recipe of the week: Super sides

Need something quick and simple for that last-minute dinner party panic? I know it’s a lot easier to simply nip down to your local supermarket and pick up something pre-made, but this tasty dish can be created from ‘store-cupboard’ staples. Salty, crisp chorizo works incredibly well with lightly wilted spinach, crunchy walnuts and juicy blackberries to achieve an all-so-indulgent side dish that will complement any meal.

Wilted spinach with chorizo, toasted walnuts and blackberries

Serves 2

Time: 10-15 minutes

500g spinach

100g blackberries

150g chorizo (chunked)

½ tsp black pepper

1 knob of butter

Method:

  1. Heat a frying pan until too hot to touch and fry off the chorizo until golden and crispy. Remove from the heat.
  1. Add the walnuts to the hot pan and dry fry until toasted and smelling delicious. For the last couple of minutes, add in the blackberries to warm through and to get the juices going, then remove from the heat.
  1. In another pan, gently melt a knob of butter and add the spinach. Turn down to a medium/low heat to avoid burning and, when wilted, remove from the heat and place in a serving bowl. Season with pepper and fold in the crispy chorizo.
  1.  Place the walnuts and blackberries on top and – voilà – a delicious side with absolute ease.
