On a cold evening there’s nothing better that curling up on the sofa with a bowl of stodge – but it doesn’t have to be unhealthy. Our pasta sauce is delicious, healthy and will satisfy your hunger. Packed with health-boosting spinach and fat-free quark, it just can’t go wrong (just don’t serve on Easter Sunday).

Spinach pasta stir-in

Cooking time: 5-10 minutes

What you will need:

4 handfuls of freshly washed spinach
200g quark
100g almonds
1tsp chopped thyme leaves
1tbsp fresh lemon juice
1tbsp almond oil
Salt and pepper to taste

What you need to do:

  1. Place the almonds into a food processor with the oil and blitz until smooth.
  2. Next add the spinach, lemon juice and thyme leaves, and blitz again until combined.
  3. Now all you need to do is add in the quark and pulse until combined – don’t blitz at this point, as you don’t want the mix to be too smooth.
  4. Add salt and pepper to taste and you’re ready to go. Stir into your favourite cooked pasta, and enjoy with a sprinkling of parmesan on top.
