Original recipe of the week: Savoury Spicy Banana Pancakes with Chive and Garlic

We know it isn’t pancake day yet but let’s face it, who can resist a pancake? Delicious pancakes are popular in all cultures from Asian cuisine to British and European, whether savoury or sweet they just taste so good. We’ve developed a super healthy recipe that tastes just as yummy as it sounds. These savoury pancakes are great paired with fish or veg, or alternatively eat them on their own or use them as wraps. Flour-free means that these pancakes are quick and simple to make (and also gluten-free!).

Savoury Spicy Banana Pancakes with Chive and Garlic

Serves: 2-3
Prep Time: 5 mins
Cook Time: 5-10 mins

What you will need:

3 eggs
2 ripe bananas
12 tsp peanut butter
1 red chilli, finely chopped
1 garlic clove, crushed
1 handful of fresh chives, finely chopped
½ tsp black pepper
½ tsp salt
1 tbs coconut oil

What you need to do:

1. To make your savoury pancake mix, in a large bowl mash up the bananas until you have a smooth pulp. In a separate bowl whisk together the eggs and add to the banana. Give it all a good mix and add the peanut butter.

2. Now add in the rest of the in ingredients and mix until combined.

3. Preheat a medium-sized frying pan and add coconut oil followed by your savoury mixture. 

4. Fry each pancake on both sides on a medium heat. Each spoonful of batter into the pan should be around a tennis ball size.
