Hélène Darroze at The Connaught unveils Taste of Summer seven-course menu celebrating seasonal ingredients

Three-Michelin-starred restaurant Hélène Darroze at The Connaught has introduced its latest seasonal tasting menu, titled Taste of Summer. The new offering, designed in collaboration with executive chef Marco Zampese, reflects Darroze’s ongoing culinary evolution and highlights ingredients selected for their provenance and personal significance. It is available for both lunch and dinner service, with a three-course weekday lunch option priced at £125, and five- and seven-course tastings available for £210 and £225 respectively.
The summer selection is crafted around a central ingredient for each course, often tied to a specific region or producer, and aim to evoke memories or a sense of place. Among them is red mullet sourced from Newlyn, Cornwall, served with fregola, Taggiasca olives, marjoram and saffron, or piglet from Arras in northern France, accompanied by cherry, black pudding, Barolo and Tropea onion. The dessert course includes a 72% single-origin dark chocolate from Araguani, Venezuela, paired with cardamom, almond and cocoa bean.
Darroze’s culinary approach is described as being inspired by memory and terroir, with each dish telling a story through its composition. Taste of Summer represents a continuation of her collaboration with Zampese, who has worked alongside her at The Connaught for over ten years and is credited with executing the daily menu with a focus on seasonality and ingredient integrity. General manager Mirko Benzo, who has worked with Darroze for 14 years, continues to oversee the dining room experience. He works closely with the restaurant’s sommelier team to align the wine programme with the kitchen’s offerings.
