New gastropub The Hart to open in Marylebone

A new pub with a culinary focus is opening in Marylebone this October. The Hart, located on Chiltern Street, known for its buzzing array of independent shops and eateries, is the latest venture from hospitality company Public House Group. It will be operated by founders Phil Winser, James Gummer and Olivier van Themsche, and aims to offer a traditional pub experience centred around seasonal produce.

The Hart will serve a menu of classic British dishes, including Crab Cakes, Bubble and Squeak, Steak and Potatoes and Banoffee Pie, highlighting ingredients sourced from the country’s farmers and producers – particularly from their own market garden at Bruern Farm in Oxfordshire.

The interior design of the venue will feature British woods, leather upholstery and Victorian-style partition screens. Aesthetically, developers say it will blend timeless elements with contemporary details. In a statement, the founders described their vision for the new establishment: “The Hart offers a classic British pub experience with a food-led focus, celebrating British farmers, producers and seasonal ingredients.”
