Bistro Sablé brings classic French cuisine to Islington with new Parisian eatery

Bistro Sablé, a new French bistro from the Noble Inns group, officially opened its doors this month Islington. Located at Canonbury Road, the venue occupies the former site of The Smokehouse and marks the latest addition to the group’s portfolio, which includes the award-winning Pig & Butcher. The restaurant aims to bring gallic cuisine to the neighbourhood in a casual, Parisian-inspired setting.

The 65-cover restaurant is divided into two main areas: a bar space at the entrance and a dining area towards the rear. The bar features a handful of tables, chairs and bar stools, while the dining room is furnished with traditional bistro-style chairs, white tablecloths and banquette seating. An open kitchen runs along the back, allowing diners a view of the culinary action. The interiors have been designed to evoke the atmosphere of a traditional bistro with decor including vintage copper pans, an original Boucherie sign, and a collection of sketches and cartoons sourced from flea markets in Paris, making for e a lived-in, authentic feel. Though the current weather may not suit all diners, there’s also a small garden at the front of the restaurant with outdoor seating, shade and heaters to accommodate guests throughout the year.

The seasonal menu features a range of real French dishes. Starters include Moules Marinière and Pâté en Croûte, while mains such as Confit Duck Leg and Pan-Fried Cod are available. Among the desserts are a Vanilla Crème Brûlée and a Valrhona Chocolate Mousse with cherries. On Sundays from midday till 9pm, the bistro offers a menu titled Les Rosbifs in a nod to local tastes, which includes traditional British roasts served with all the trimmings.

The wine list, curated by former Mere head sommelier Alex Corvez, is comprised entirely of French wines, most of which are available in flexi-form – i.e. as 75ml or 125ml glasses, or by the carafe or bottle. The drinks menu also includes classic cocktails such as the French 75, as well as a range of craft and mainstream beers.
