From 9th March until 6th June, Michelin-starred chef Nieves Barragán Mohacho will lead a three-month culinary residency at The Donovan Bar in Brown’s Hotel, Mayfair. The collaboration brings the Spanish chef’s distinctive cuisine to one of the city’s most renowned cocktail venues.

The residency is part of a broader initiative at Brown’s to collaborate with leading chefs, aiming to introduce new culinary experiences to its guests and the wider public. Part of the Rocco Forte Hotels Group, the hotel is situated in central Mayfair and is celebrated for its historical significance and luxury hospitality. In addition to the food menu, cocktails will be curated by Salvatore Calabrese (known as “Maestro), alongside director of mixology Federico Pavan. Their drinks have been designed to pair with Barragán Mohacho’s dishes, incorporating both bright, citrus-led options and cocktails with Spanish influences.

The influential Barragán Mohacho has reshaped London’s Spanish dining scene, and is the chef behind acclaimed restaurants Sabor and Legado. Both have earned Michelin stars – Legado in Shoreditch most recently. Her approach offers a contemporary interpretation of Spain’s regional dishes.

She has developed the menu for her residency at The Donovan specifically for the venue, focusing on Spanish-inspired small plates intended for sharing. Dishes include Seared Tuna with silky Ajo Blanco, Porthilly Oysters presented with a Fino sherry emulsion and citrus oil, Pork EarA Feira”, Confit Artichoke with Lovage Aioli and Arroz Melosa, a rich and creamy rice dish. The selection is designed to complement the bar’s atmosphere and encourage a communal dining experience.

Barragán Mohacho explained, “For this residency, I wanted to create food that truly belongs at The Donovan Bar. It’s a room with real character: glamorous, intimate and full of life. The menu is rooted in Spain but shaped for London: bold, expressive flavours designed to be shared over exceptional drinks. It’s about pleasure, generosity and creating dishes that feel as memorable as the night itself.”
