Enrico Marmo, the former chef of Balzi Rossi in Ventimiglia, has opened the ninth edition of the Gusto Montagna gastronomy summit at the Prato Nevoso ski resort in the Italian province of Cuneo. The event, which has become a fixture in the high-altitude dining scene, aims to showcase leading figures in Italian and international cuisine, bringing together renowned chefs and enthusiasts in a mountain setting.

Marmo, originally from Canelli, returns to the kitchens of the resort’s Osteria Le Stalle after participating in the 2024 edition of Gusto Montagna. At the inaugural evening for 2026 on 16th January, he prepared an exclusive dinner to highlight his distinctive culinary approach, which focuses on both plant-based and seafood ingredients. The chef enthused, “Gusto Montagna was a wonderful showcase for me, and I’m thrilled to be able to participate again. Opening this year’s program, which will feature esteemed colleagues, will be an honour.” He added, “I formed a wonderful relationship with Adelasia (owner of Osteria Le Stalle) two years ago, which was cemented at a dinner I hosted in Turin. I’m thrilled to be returning to her ‘home’ to share my vision of cuisine with those who haven’t yet had the opportunity to discover it.”

The 2026 edition will feature several high-profile guest chefs. Among the newcomers are Fabrizio Mellino of Quattro Passi (three Michelin stars, Nerano in Italy), Ana Roš of Hiša Franko (three Michelin stars, Kobarid, Slovenia, and named World’s Best Female Chef in 2017 by The World’s 50 Best Restaurants) and Davide Di Fabio of Dalla Gioconda (one Michelin star, Gabicce Monte in Italy). Returning participants include Carlo Cracco of Cracco in Galleria (one Michelin star, Milan), who previously appeared at Chalet il Rosso, and Enrico Marmo himself.

Alberto Oliva, head of Prato Nevoso and founder of Gusto Montagna, commented on the evolution of the event: “Gusto Montagna was born nine years ago from a simple yet ambitious intuition: to demonstrate that haute cuisine can engage with the mountains in an authentic, profound and contemporary way. Today, this event has become a benchmark in the Italian and international gastronomic landscape, attracting some of the world’s greatest culinary exponents. The 2026 edition represents a further leap in quality: the presence of three chefs of the caliber of Ana Roš, Fabrizio Mellino and Davide Di Fabio, along with the return of key figures like Enrico Marmo and Carlo Cracco, confirms the credibility and strength of a project that continues to grow without losing its identity. Prato Nevoso is not just a spectacular setting, but a place of cultural and gastronomic experimentation, where taste meets the territory, vision and the future.
