Willett’s, a new British bistro and bar, is scheduled to open this April at The Cadogan in Chelsea. The restaurant, located within the historic 1887 townhouse, aims to provide neighbourhood-focused hospitality and a menu centred on seasonal British produce. The opening follows a refurbishment and the appointment of executive chef Michael Turner, with the venue planned to serve breakfast, lunch, dinner and Sunday roasts to both local residents and visitors.

Named after the Willett family, who originally built the Chelsea townhouse, Willett’s draws on the heritage of its location at the intersection of Chelsea, Knightsbridge and Belgravia. The restaurant will offer a daily specials board that changes with the seasons, as well as set menus priced at £32 for two courses and £36 for three courses, available from lunch until early evening.

Turner, who joined The Cadogan in 2025, brings experience from a 13-year career with the Gordon Ramsay Group, including roles as executive head chef at The Savoy Grill and The River Restaurant. Turner explains: “Our ambition is to create a true neighbourhood bistro, somewhere welcoming and centred around British cooking and produce. We’ll focus on well-loved classics and seasonal ingredients, with the aim of building a restaurant residents return to regularly. Being in Chelsea, it’s important that Willett’s feels part of the area – a place for weekday suppers, long Sunday lunches and everything in between.”

The menu features British staples such as sourdough crumpets, which are prepared daily and served with a variety of toppings, including Gentleman’s Relish, mushroom parfait with Wiltshire truffle, and Dorset crab. Starters include Hand-chopped Ex-dairy Beef with Mushroom Ketchup and Prawn Cocktail with Bloody Mary Jelly, while main courses range from Sutton Hoo Chicken and Morel Pie to Soused Cornish Mackerel. Classic British puddings, such as Sticky Toffee Pudding and Jam Roly-poly, will also be offered.

The interior, redesigned by Studio Shayne Brady, incorporates heritage greens, neutral tones and original herringbone parquet flooring, with features such as an open kitchen and chef’s counter. Shayne Brady commented: “Our vision for The Cadogan was to celebrate Chelsea’s heritage without being bound by it. The history of the King’s Road and its market gardens gave us a rich starting point – craftsmanship, agriculture, abundance – and we translated that into a contemporary British bistro, Willett’s, layered with warmth and character.”

Willett’s bar will feature a seasonally guided drinks menu, a zero-waste philosophy and a selection of around 20 wines by the glass, including those from British producers. The venue will be open daily from 7am to 11pm, with reservations available from 11th March and a soft launch period offering 25% off food from 28th March to 1st April.
