Julie’s in Holland Park has launched a limited-edition cocktail called Rhubarb No 6 in collaboration with Brother’s Bond Straight Bourbon Whiskey. The cocktail, available from June 2026, is the result of a partnership between Julie’s and the bourbon brand co-founded by actors Ian Somerhalder and Paul Wesley, known for their roles in the television series The Vampire Diaries. The new serve aims to offer a distinctive take on bourbon-based cocktails, combining locally made rhubarb cordial with the American whiskey.

Rhubarb No 6 is described by the creators as “aromatic, bright, and elegant”, designed to diverge from traditional bourbon cocktails. It features a homemade organic rhubarb cordial, made by the Julie’s team from seasonal rhubarb, sugar, salt, blood orange and raspberry vinegar. This is combined with pear purée, Pedro Ximénez sherry, lemon juice and orange bitters, with Brother’s Bond bourbon forming the base.

The bourbon itself is produced in North Carolina from a blend of four grains, using regenerative farming methods. According to details provided by the distillery, the whiskey is aged for at least four years and is distilled on Vendome copper stills. The result is a spirit with “notes of honeyed cornbread, warm vanilla and toasted oak, with a mellow, lingering finish”.

Restaurant and bar Julie’s, now under the ownership of Tara MacBain, has recently undergone a design transformation led by Rosanna Bossom, introducing a vibrant, maximalist aesthetic to the space. The venue continues to serve a menu of French brasserie-inspired dishes alongside its bar offerings.

Rhubarb No 6 is served in a rocks glass over a large ice cube and garnished with bergamot zest. The cocktail’s flavour profile is described as opening with “fresh pear and citrus zest, followed by soft bourbon warmth”. The mid-palate is “lightly tart and floral, with the rhubarb adding a clean, refined acidity”, and the finish is “dry, smooth, and gently spiced, with subtle orange aromatics and a delicate lemon oil perfume.”

This collaboration marks a continued trend of London venues working with international spirit brands to create limited-run cocktails. Rhubarb No 6 will be available at Julie’s for a limited period, offering patrons an opportunity to sample a drink that blends British seasonal produce with American whiskey craftsmanship.
