Fancy being naughty but promised you would be nice? We have the simple solution to your problems. Sweet, yummy and also very healthy – you can’t go wrong! It may sound strange to use a herb that you would normally garnish your spag-bol – but don’t knock it until you’ve tried it…trust us.

Grilled fresh strawberries in a basil syrup

Serves: 2

Prep time/Cook time: 10 mins

What you will need:

A box of strawberries – halved

4 tbps caster sugar

3 cups of water

5 fresh basil leaves- chopped

A pinch of salt

A splash on vanilla extract

What you need to do:

  1. Place the sugar and water in a saucepan on a low heat and keep it on until the sugar has melted into the water to form the syrup base.
  2. Add in the vanilla, salt and basil leaves, and continue to stir on low heat until the liquid has thickened slightly.
  3. Now remove from the heat and set aside whilst you lightly fry/grill the strawberries in a dry frying pan.
  4. When slightly caramelised put the strawberries in your bowl of choice, top with 2 table spoons of the syrup and enjoy.
