Peanut butter, smooth and crunchy, sweet and salty, with jam, on its own in a sarnie or on a oat cake. There are lots of way to enjoy your peanut butter but have you ever thought about the other nut possibilities you could enjoy? Springing up all over the supermarket shelves are nut butters made from almonds, hazelnuts and even cashews. These super healthy and really tasty nut spreads can be used in the same way as peanut butter and generally contain a lot less salt and additives which makes them a lot better for you. An even better way to enjoy this new found fad is to make it yourself. It takes a bit of patience but is certainly worth it.

Mixed Nut Butter

Cooking time: 20 minutes

What you will need:

200g plain mixed nuts
1 tsp sea salt
30g coconut oil

What you need to do:

  1. Pour your nuts into a microwave safe bowl and add in the coconut oil
  2. Microwave on high for 30 seconds and remove when done
  3. Transfer the now hot nuts and coconut oil into a food processor and add in the salt
  4. Blitz in the food processor for about 15 minutes or until smooth and runny
