This summer in Soho, chef Dom Fernando will launch a six-week culinary residency titled Miris y Maíz at his restaurant, Paradise – known for its Sri Lankan-inspired menu. Following a preview in June, the residency will run from 24th July to 30th August, welcoming patrons on Tuesdays to Fridays from 5.30 till 10.30pm, and on Saturdays from 12.30 to 10.30pm (with a break at 4 till 5). Miris y Maíz will offer a menu that merges the spices, flavours and textures of both Sri Lankan and Mexican cuisines, using British ingredients. According to organisers, the dishes are designed to blur the lines between traditional culinary categories, with Fernando’s cooking described as “dissolv[ing] traditional culinary borders”.

Menu highlights include Crisp Pappadam Tostadas topped with guacamole, spiced cashew crunch, pumpkin seed oil and carrot salsa macha. Among the larger plates is a 12-hour Coconut Braised Jaffna Beef Brisket served with chocolate and peanut mole and calamansi curd, as well as Coal Roasted Prawns seasoned with ancho-chilli, a Nuwara Eliya coffee rub, lime pickle butter and chipotle, accompanied by smashed cucumber and cactus slaw. Most small plates are priced between £4.50 and £5.

For dessert, there’s a reinterpretation of the classic Mexican Tres Leches cake, infused with Sri Lankan arrack and topped with burnt meringue, along with a number of other options. The drinks menu complements the food with cocktails that incorporate ingredients from both cuisines. Options include a Chilli and Cherry Margarita, which incorporates tequila, arrack, malu-miris chilli, chipotle and oat milk, and an Arrack Michelada, made with Ceylon Arrack, Lion lager, chamoy, tomato water and tajin foam.

The residency is expected to attract interest for its experimental fusion of global flavours in a central London setting.
